Grease Trap vs Grease Interceptor: Which One Does Your Kitchen Need?
The terms “grease trap” and “grease interceptor” are often used interchangeably, but they’re actually different devices designed for different situations. Understanding the difference can save you thousands of dirhams and prevent compliance issues.
What Is a Grease Trap?
A grease trap (also called a grease recovery device or GRD) is a smaller, point-of-use device installed directly under or near kitchen sinks. It captures FOG before it enters the drainage system.
Key characteristics:
- Capacity: 30-500 liters
- Location: Under sink, on floor, or in utility area
- Installation: Indoor, above ground
- Cleaning: Manual removal or pump-out every 1-4 weeks
- Cost: AED 500-5,000 (unit) + AED 300-1,800 (per cleaning)
- Examples: AG1, AG2, AG3, AG4, AG5
What Is a Grease Interceptor?
A grease interceptor is a large-capacity, underground tank that handles wastewater from an entire facility. It’s designed for high-volume operations where a standard grease trap isn’t sufficient.
Key characteristics:
- Capacity: 1,000-10,000+ liters
- Location: Buried underground, outdoors
- Installation: Requires excavation and civil works
- Cleaning: Vacuum truck pump-out every 1-6 months
- Cost: AED 10,000-50,000+ (installation) + AED 1,500-4,000 (per cleaning)
- Examples: C-Type traps, custom concrete interceptors

Which One Do You Need?
Choose a Grease Trap if:
- You operate a single restaurant, cafe, or kitchen
- Your daily wastewater volume is under 5,000 liters
- You need a quick, affordable installation
- Your kitchen is in a rented space (trap can be relocated)
Choose a Grease Interceptor if:
- You manage a hotel, mall food court, or central kitchen
- Multiple kitchens share one drainage system
- Your daily wastewater exceeds 5,000 liters
- Municipality requires underground pre-treatment
Can You Use Both?
Yes — and many large operations do. A two-stage system uses individual grease traps at each kitchen sink (first stage) feeding into a central grease interceptor (second stage). This reduces maintenance on the large interceptor and provides redundant protection.
This setup is common in hotels and food courts across the UAE.
