When you buy a grease trap, you are choosing between three main materials: stainless steel, mild steel (epoxy-coated), and plastic (PVC or HDPE). For commercial kitchens in the UAE, AISI 304 stainless steel is the best long-term investment. Here is the practical breakdown of why.
The Material Options Compared
AISI 304 Stainless Steel
- Lifespan: 15–20+ years with proper maintenance
- Corrosion resistance: Handles hot grease, acidic food waste, cleaning chemicals, and the UAE humidity without rusting
- Cleaning: Smooth interior surfaces — FOG does not stick to polished stainless the way it bonds to rough or pitted surfaces
- Hygiene: Non-porous, no bacterial harbourage in surface cracks
- Weight: Heavier than plastic, lighter than concrete
Epoxy-Coated Mild Steel
- Lifespan: 5–8 years before the coating degrades
- Corrosion resistance: Good when new. Once the epoxy chips — from cleaning tools, thermal stress, or acidic waste — the exposed steel rusts fast in UAE conditions
- Cleaning: Grease builds up in chipped and pitted areas, making full cleaning harder
- Cost: 30–40% cheaper than stainless steel upfront
PVC / HDPE Plastic
- Lifespan: 5–10 years
- Heat tolerance: Warps above 60 degrees C — a problem in kitchens that dump hot fryer oil down the drain
- Cleaning: Grease bonds to plastic surfaces more stubbornly than to stainless steel
- Cost: Cheapest option. Acceptable for low-grease environments like coffee shops
- Acceptance: Some municipalities do not approve plastic traps for high-volume kitchens

Dubai Municipality inspectors check the physical condition of your trap during food safety audits. A rusty, corroded trap with peeling coating is a red flag — even if it was cleaned yesterday. Stainless steel traps look professional visit after visit, and inspectors notice. A clean stainless trap signals a well-managed kitchen.
