What a Grease Trap Actually Does

A grease trap sits between your kitchen drains and the municipal sewer. When hot, greasy water flows out of your sinks and dishwashers, it enters the trap and slows down. Fats, oils, and grease (FOG) float to the surface. Solids sink to the bottom. Relatively clean water passes through to the sewer.

Without a trap, FOG goes straight into the pipes. Within weeks, it solidifies and narrows the pipe diameter. Within months, you get blockages, backups, and sewage smells in your dining area. The municipal sewer network gets damaged, and you get the fine.

Dubai Municipality Requirements

  • Every food establishment must have an Dubai Municipality approved grease trap
  • Traps must be cleaned at minimum every 2 weeks for high-volume kitchens

  • Waste must be disposed through a DM-approved waste hauler — not down the drain

  • Type B above-ground traps: Mid-size units for full kitchen lines. Most common in Dubai restaurants.
  • Type C in-ground traps: Large units for hotels, food courts, and high-volume operations.
  • Stainless steel traps: Durable, easy to clean, preferred by DM inspectors.
