Grease Trap Cleaning for Food Courts & Mall Operators in the UAE

Food courts generate some of the highest FOG concentrations in the UAE commercial food sector. With 10–40 tenants sharing a drainage infrastructure in a space designed for maximum throughput, a single non-compliant stall or an overloaded central interceptor can trigger a DM inspection that closes the entire food court, not just the offending outlet. GTC provides food court and mall management teams with a structured grease trap compliance programme covering both the central interceptor and individual tenant units.

The Two-Layer Compliance Challenge

Most food courts in UAE malls operate a two-layer grease interception system:

  1. Individual under-sink units at each tenant stall — the tenant’s responsibility, but falls on the mall if unchecked
  2. Central in-ground interceptor serving the shared drainage manifold — the mall operator’s direct responsibility

Dubai Municipality inspects both layers. A central interceptor that is compliant does not offset non-compliant individual units. GTC manages both layers under a single programme, coordinating with individual tenants where needed and holding one compliance record for the food court manager.

Compliance Costs Per Stall

For food courts evaluating whether to centralise grease trap maintenance under a single contractor, the cost comparison typically shows a 15–25% saving over fragmented tenant-managed cleaning, plus a significant reduction in administration. DM Requirements for Food Courts

Under DM Technical Guideline No. 13, every food outlet in a food court — regardless of whether it shares drainage infrastructure — is individually responsible for grease trap compliance. The mall operator is additionally responsible for the shared drainage infrastructure. Fines for non-compliance range from AED 2,000 for an expired certificate to AED 50,000 for FOG discharge violations. See the complete DM penalty schedule.

For common compliance questions, check our FAQ page. Between scheduled pump-outs, our bio-dosing systems keep lines cleaner and reduce the risk of mid-cycle overflows in high-volume food court drainage.
